Default Saving Postscript from Acrobat 8

Saving a postscript file from Acrobat takes 4 steps...

1. click 'File' menu
2. click 'Export' submenu
3. click 'PostScript' menu
4. select 'PostScript' from the list

OR 3 steps ...

1. click 'File' menu
2. click 'Save As'
3. change file type to 'PostScript'

Is there a way to add a button in the toolbar in Acrobat 8 (a la Microsoft Office) so that I can just click a button and export a PostScript file.

I have 150 PDF files that need to be saved as PostScript

How about creating a Batch Sequence, and then run all 150 in a single go?

See Advanced->Document Processing->Batch Processing.
