Before setting-up your InDesign print settings, you have to understand that your Fiery rip Color Setup will override most (if not all) color data sent to it if it's being set-up a certain way (it may be set-up to emulate SWOP, to convert RGBs and so on). So you have to check that first and decide where you want your color management to occur. That being said, we always send composite CMYK with "Simulate Overprint" checked.
Better train people and risk they leave - than do nothing and risk they stay.
