Default Peach colored discoloration of UV coated sheets

We are running 16 pt SBS on an Indigo 7500 which we then UV coat offline using a digital glueable gloss UV coating. My customer recently gave me back a few samples that has a light peach colored tint forming around all the cut edges of the item. Has anyone ever experienced anything of this nature?

The only thing I could think of is that the cutter blade was dull which caused it to heat up and cook the edges which turned it peach colored.

I should have also mentioned that the sheet we are printing on has been treated with a sapphire coating to allow us to print effectively on the Indigo.
