Handbrake is a great tool, it's much easier than using ffmpeg which can also do the same thing (they use a lot of the same open source libraries). In some cases it will work better to rip the DVD to a VIDEO_TS folder on your hard drive and then convert it from there.

For making backups of DVDs that you own, some other great Mac programs are, MacTheRipper, iSquint and Visual Hub, DVD2One and Popcorn. Although all this software should be legal for personal backups, your country of origin may have laws restricting your fair use.

What kind of mac do you have? It only takes about 45 - 60 minutes for me.

The encoding time is going to depend on how fast your Mac is and the settings you use. It takes around 20 min for me to encode an hour of video on an Core 2 Duo using h264. The same footage on a G4 would take around 20 hours. You'll find that using MPEG 4 video is far less processor intensive, so it will take much less time, but the quality isn't nearly as good.

This thread is too old but the best application in times of ripping on Mac is Mactheripper. It really fast converted. Handbrake is too slow.
