HP5500 60" non postscript with Snow Leopard

Hey guys, I've been trying to figure out how to communicate from Snow Leopard to our HP5500 60" non postscript printer. Without apple talk I can no longer print directly to this plotter. I can go through esko but thats a pain and has limitations.

I've used some gutenprint ppds with this plotter and they will communicate but I don't have the correct page sizes which is the benefit of the 60" plotter. In the old days I would have modified a ppd but it seems its not that easy anymore. I've been doing some research and it looks like there is a chance that modifying the cups xml file maybe an option. Only problem is that I have now idea how find them to do this. Has anyone done this and care to help me out.
