Color Workflow

I am a narrow web flexo printer with a GMG rip and Epson 9880. My question is how and where should I be applying curves? Should my plates be linear and the gain from press be shown in my proofs or should I be cutting back on my plates for dot gain and then my proofs representing what that would look like on press? When the customer supplies a proof without showing any dot gain how does the printer give them a proof back to match? I don't think we should be color correcting every image in photoshop. Am I thinking correctly by tagging all the images with a profile that would represent our dot gain (pulling back values) and then proofing that?

Hoping someone can clarify the whole process for me.

Thanks
Steve
