Different types or brands of plates for the one job

Is this ever done? As a hypothetical example, if a client had a regular CMYK job which needed 240lpi, but had +1 spot which requires a plate with practically security-level detail. Would just that plate be a different brand/type?

I doubt it. Printers choose their plate type according to the work they do. The 1% dot for a 240 lpi AM screen is 10 microns. Which is pretty small. Are you wanting to print smaller features? Stocking and switching between different plate types for the occasional job is not practical.
