You can always make chart with spectrum and convert it with same engine in Photoshop to all destination profiles...

    Your printfiles contain extra colors if in versioning you have extra plates. Check your PDFs. I don't think change the prepress workflow switch just because of versioning issues is the best way to go timewise.

    When checking Epson water-based fleet, keep in mind that a lot of good machines are discontinued by Epson and you will not get propper support. P10000 is excellent printer, but it is now also discontinued.
