Is there a way to rename a group of colors in a swatch pallet in CC 2015?

Pantone 123
Pantone 124
Pantone 125

to

Cory Pantone 123
Cory Pantone 124
Cory Pantone 125

Have you tried selecting the Pantone 123 listed in you "Swatches" palette then select "New Color Swatch"
In that dialog give the color a new name, keep the Color Type as Spot and the Color Mode as Lab (The Lab values are the ones from the original Pantone 123)

Why in gods name would you want to do this?

The renaming of Pantone colors is not uncommon among digital illustrators and the labels/packaging crowd. It's a way to associate colors with their function in the art. Although (without clarification in this case) Cory Pantone 123 vs Pantone 123 seems pointless. One scenario might be to identify a Pantone spot color whose Lab values have also changed, perhaps to account for the effect of a specific substrate's effect on the color i.e. "Cory Pantone 123" may be the way to achieve the appearance of "Pantone 123" on a specific plastic rather than on the paper in Pantone's swatchbook.
