ExtremeZ-IP 6.0. Really simple and has solved the network problem. We now connect to the XServer via AFP instead of SMB. Alternatively, you could use a more recent version of Windows Server.

Just to let you know, I have resolved my issue by using third-party software on Windows Server 2003 to share via AFP 3.0. Everything is now running smooth!
