In addition to all the comments so far. Before trimming the head and foot, put each stack of books into the guillotine with the spine under the clamp but clear of the blade. Do a cut cycle with clamp pressure about 4000, the will help to flatten the books and make trimming easier and more accurate.

You should get close by using the same ICC input profile on both the digital and wide format and the calibrated baseline profile of each device as the destination profile If the operator on the digital press has made adjustments to densities etc, this will affect the accuracy of the colour matching.
