Are you talking application or output? The output process will be dependent upon the RIP, most have the ability to create custom look up tables. Either way whether they use LAB, RGB or CMYK to handle the conversion depends on the RIP. The current Pantone approved method is LAB.

At 185" how are you outputting? If you do the math you may be hitting a TIF limit and may not need the resolution depending on how you're going to print. We use 150 and even 100 dpi for ink jet work regularly without any degradation of the print ​

Now that you mention keychain there was a write up about 1 month ago about serious security issues with keychain and sandbox. The just about 3 days ago Malwarebytes reported that they had their first malware report exploiting the keychain flaw. Maybe a long shot but a possibility.

Test the network cards, if other systems can see the server and the MAC cannot see if the MAC can see your file server if it was connected to one.
