It's simply doing the best it can to emulate the colour it is trying to match. The pure yellow of the Epson in combination with the paper need 'muddying' to match the target. I understand it looks a bit odd. You can edit it out manually though.

Why do you set the densities a little less? I used to set the maximum densities higher than would be achieved on press. If you limit the density on the yellow it may try and add other colours (usually cyan).
