Sculptured-emboss artwork for engraver

I am looking to educate myself on how sculptured emboss dies are created. I am aware that multi-level emboss die engravers need color-coded digital files (each color indicating a different emboss depth), but say you are embossing an image of a face, or any image with varying or irregular curvatures. Would one have to give the engraver a file created with gradients, along the same lines as color-coding different emboss depths and ultimately resembling an infrared readout, or would it be better to just get some clay and physically sculpt my "sculptured" emboss die for reproduction in brass?
