i thinking and check Acrobat Reader PRO . you can go to [Print Production -> Convert Colors ] there were that you can set and converting color to any object that you want. like all text in RGB color space to change and set them to All Text in CMYK , or whatever that you want.

hi,... it's good ASK, and i want to how . but, i think you asked wrong , beacuse in overprinting , you dont have white background in your object, beacse over printing cover it in all color. for example, when you set a square shabe in black 100% and set in overprinting, it's covered in CMY...
