Aluminum plates expand and contract just like film as temperature changes.

best, gordo

Plates should return to their initial size upon cooling as they exit the oven unless something goes wrong. Plates may suffer permanent expansion if overheated and coating color will also change a lot : check the air circulation inside the oven and temperature control accuracy. The plates will also buckle if the thermal stress is significant and/or heating is not uniform. Let's not forget offset plates are not just aluminum sheets, coating does play a role. I wouldn't blame the baking for a permanent expansion of 2 mm though, unless you bake very large plates i.e. B1 size plus.
Do a test, reduce the oven temp setting by 30-40 deg. C and increase baking time, see what happens.
