Can I stroke text the following way for trapping?

You can just knockout the text to white with no stroke necessary. The stroke is not really a trap because there is no area of one color touching an area of the other color - both your inks mix.

If you feel you need a stroke for readability purposes, the top line will be the most legible.

There is no trapping to this. You can spread one, or the other color back, but that will give you an outline. The outline would be either PANTONE 109 or cyan.

On a side note, this will be difficult, if not impossible, to proof accurately - that includes how it looks on your monitor.

The green is made up of Pantone 109 C overprinting cyan. The green is not a single spot colour on its own. So, if the cyan plate underneath slips cyan will show thru, or if the yellow slips same thing. Would I still need to stroke the text?

You don't trap a mixed ink like this unless it butts another color that is not included in the mix.

You can do that, or you can eliminate the stroke altogether. The stroke isn't really helping anything from a registration standpoint.

The purpose of a trap is to prevent white paper from showing through where 2 different inks touch but don't overlap (the trap is the overlap). Whenever you mix inks, there is a chance that a little bit of one ink will peek out but that's just the mechanical nature of printing.

Ok, so would it be ok to go with the option in my first example then, with the text stroked with cyan overprinting so it gives the apperarance of green and the white KO text printing ok in the event of misregisteration?

It's not going to matter. You're still going to have PANTONE 109 and cyan.

Take a look at your separations to get a better idea.

Using Esko's Viewer for Adobe Illustrator plugin and it's registration view feature to shift the colour plates you can easily see the results of the current layout should you have mis-registration on press. Great way to check if you need trapping or not.
