Everything is set up correctly on the Mac server...but when I launch DotSpy from my Mac workstation, it doesn't recognize the license.

I'm working with Esko, but they are having trouble resolving it.

Any suggestions?

Have you installed the Esko Server License Manager on the Mac Server. You need to manually launch using the Server Start app. I guess you could add this to the login items so start every time you start the server.

Another thing are all the mac in the same subnet?

Yes, and yes...that didn't work...Esko tech couldn't get it to work either.
