Is there a way to create a droplet to convert cmyk to grayscale on a batch of pdf files?

Not with PitStop Pro, it doesn't support Batch processing

Yes, you can easily do it using Preflight droplets of Acrobat Pro.

Open Preflight panel and explore the PDF Fixup options. It already includes 'Convert to grayscale' action which probably does exactly what you want, but you can also customize it and create new ones.

Then just create a droplet from the Options menu on the palette and drop your PDFs on it.
