Illustrator gradients

To my knowledge it cannot be done. You can make the appropriate mix in the appearance pallet though with overprinting.
 
Just did it . . . unless your talking about a "mixed ink" swatch like you can make in InDesign . . .
 
You can do it in Esko PackEdge color factory-just add the spot colors and you have a swatch comprised of all of them-very handy.
