Hello Eduardo,
Jobs that are stored on Image Control are just the job settings like the color bar that was used, changes to reference values like +/- ink percentages, multi-color reference values from inside the job, or image areas used in the job. Also, if the job was saved as an OK sheet these values are stored as well.
Protocols (if stored, they do not store with the job) can be accessed directly from the service menu in the Archives column in the button labled "Protocols". Protocols can be stored automatically when you set up the job just select the store protocol and you won't have to remember. If you don't select it there you will have to remember to save the data before you start the next job or the data will be lost. To save the protocol at the end of a job go to the icon that looks like a page in the Overview Menu (picture of an eye)
You can't save Color Sets from a stored job either. (well you could load them and create a new color set, but you have to remember that the saved data is of the very last scan and may not be optimal) Besides, there is no reason to be storing or creating color sets all of the time. Once a color set is set to standard values it should remain there unless ink or substrate change dramatically.
Save Quality Data needs to be set to store automatically (not a good idea in most circumstances) or it must be stored when the operator is sure that the data is good. (up to standards, customer approval, etc.) The "Save Quality Data" button can be found in the Modify Reference Value window (Icon looks like a diamond with three dots inside)
That is about all you asked about. If I can be of additional assistance please contact me via e-mail.
