Scanner/OCR/SAP

A mid-size mom & pop shop I was at had an Accounting assistant that had the responsibility to use a tray scanner to capture and archive every document that came into the plant. I would like to implement something similar to save OCR'd copies of shipping documents for SAP auditing. Does anyone have a Receiving workflow like that and can recommend hardware and/or software?
