Setting up Curve

I need a little help.
I might need to set up a curve for a particular client.
The client is looking at a Kodak proof and the boss wants to
see if we can get closer to that. We're set up for Gracol.
Any thoughts on how to do that.
They go on densities at press and we're using dots.
I don't understand how density/dots relates to each other.
If our Gracol curve is +5.2 cyan and he needs to pull back quite a
bit is there away to measure that?
And for the printer, I'm thinking we can put a chart on with
this clients job, get it how they want it, then calibrate the printer
to that.
