In my opinion it's not as much Prinect thing as it is Windows/Mac thing. We have had similar experience, but not as much as you mention. We are running Prinect on Windows Server 2012 R2. What server is Prinect running on? Did you do all possible changes to your networking on your mac's?

We use OKI and Xerox devices to do booklet proofing. For oversize work, like Kitfolders, etc.. we use Epson that was not good for color anymore, just manually flip the sheet. Backup is not perfect, but most of the time within 1/8".

Prinect 2017 is out. We just upgraded last week. Sierra, CC 2017 and Prinect 2017 work just fine.
