In Acrobat, I would use the "Edit text & images" tool. Select the image you want to change and right-click on it. Then select the "Edit Using > Adobe Photoshop.
Once the image is open in Photoshop, go to "File > Edit > Convert to Profile..." and replicate the settings in this screen...
HP is selling a module for its Indigo presses called EPM (Enhanced Productivity Mode) which converts a CMYK file to CMY at the RIP.
It is not perfect but it does a surprisingly decent job.
In your Pages palette, select all the pages.

I helped a client of mine set up a new iMac 5K last night. She LOADED it with a 3TB HD and 32GB of RAM.

I think what is happening is....
the outlined shape that you have highlighted is also a clipping mask.
The dimensions in the menu bar reflect the area of the clipping mask.
The dimensions in the Info palette is including the bounding are of the item being clipped by the clipping mask.
Gordo, Opaque White has worked well for me in several situations. I've used it on uncoated colored stocks, vinyls and clings. Even a metallic (reflective) silver stock. In my experience is has been both white and opaque.
What is the line screen and cell depth on your anilox roller?
Soft Touch AQ requires a roller with deeper cells than Gloss, Satin or Matte AQ.
Most AQs are good with 8.0-8.5 BCM.
Soft Touch likes 10.0-10.5 BCM.
Are you using an external RIP, or are you spooling directly to the printer?
The drivers and spoolers on these devices are not the most robust.
We are using a 3rd part RIP, ORIS Color Tuner, and have never had this issue.
