I don't know the Epson GS6000, but we've been using the HP latex printer for several weeks now. We're very pleased with it, but be aware that it DOES need environmental control and fairly heavy duty extraction, despite everything that HP will tell you pre-sales. After it's installed, they have strict temperature / humidity ranges and won't deal with service calls unless you meet those. Fairly common sense TBH, but a lot stricter than you might expect. You must have sufficient air extraction. Case in point, we installed the machine in a very large room (nothing else in it), but no extraction. When printing large posters with a lot of heavy ink coverage, the room completely filled with a strong smelling dense "fog". It made me cough as well, so I immediately pulled the operator out of the room. Turns out this is a well known phenomenon and you HAVE to have pretty good extraction to make sure it doesn't happen.
