How to Embossing on an Offset Press

would think it would be difficult to achieve the 'tonnage' needed to emboss on an offset press
Actually the cylinder layout improves tonnage. Think of surface area. Only one axis is in contact pressure as opposed to the entire square image area of platen.
 
Unlike (quality) embossing, scoring and die-cutting don’t necessarily require a counter.

Old school Heidelberg GTOs used to do crash numbering, etc., but it was the last thing to go down on the sheet and utilized a separate attachment at the end of the press.
Not crash numbering, just numbering.
Crash numbering is when you number an entire NCR or OTC set by using the impression of the numbering machines to crash through the set, most commonly seen on continuous collating machines such as a Didde Glasser.
