Does anyone know any server beside Asura that could preflight pdfs and output both EPS and PDF

How much are you wanting to do? And automate? I would certainly look at Enfocus (maybe PitStop Server?) as everyone has to use their technology at some point.

Callas pdfToolbox 4 Server can preflight, correct, color convert and export EPS's of the pages. We could even impose the PDF's then export an EPS of the imposition.

Do you know what the price range is for Carla software.
Pitstop server only output PDF not eps, and to get eps output we have to get another software to work in conjunction with Pitstop.
