Is anyone managing all of there pre-press work from one centralized system feeding multiple workflows / Offset , Wide Format, Digital?

Yes,
We don't do a lot of wide format, most of that is outsourced, but the little that we do, along with offset and digital (HP Indigo) are processed through Prinergy

Prepress workflow systems such as Esko's Automation Engine thrive at doing that. https://www.esko.com/en/products/automation-engine. Feeding multiple output devices and automatically choosing the correct one can be done by many criteria such as layout size, number of separations, pulling from an MIS system, and on and on . . .
