Is the latest version of Adobe Illustrator CC 2016? I tried looking it up and I couldn't find it.

Latest version is 2015.2.1

If you have Adobe CC it will show you if there is an update available. There is no release yet on 2016 CC.

Just take the last version you have and add a number... that's all adobe does.
