Late to the game here but I too am having this same issue on a Versant 280. Mind you my situation is a bit different. I printed the covers 2-up on 11x17 (80lb 216gsm Gloss Coated Cover), trimmed down to 8.5x11. I set that printed cover sheet into Tray 5 11x8.5 SEF and set up to insert it as pre-printed cover mating to the insides of the book on 11x8.5 SEF 20lb 75gsm uncoated and finished with a saddle stitch, high spine press and face trim. It was GLACIALLY slow!
I think that even though I've selected this as a pre-printed cover insert that the press is still taking time to adjust fuser temps (this has not been confirmed with support). Near the end of the run I had some time to alter the print setting and spec'd the pre-printed cover insert to a 105 gsm gloss sheet and the books printed much faster (x10 times faster)...
I logged into my press as @jrsc had stated and the productivity mode was set to 'Image Quality'. I've changed to Optimize for speed to see if it would make a difference and BAM! It was also much faster. Thanks @jrsc
