Does anyone know a variable that will put what color profile you are using on your proofs.

It's not a variable, it's a mark that does this. It's called, "Sherpa-JobLogStripSmall". That will indicate which proofer and output profiles are used.

We used that before but took it off all we want is the color profile on the proof dont ned the other stuff.

no thats just the way we want our proofs i dont need all of agfa info on there just what i want.

Well, you could just place a text mark with the name of the profile manually typed.
