black and white point

What are good cmyk values for setting the white and blackpoint of a photo?
I was teached to use 5,4,4 and 0 percent (C,M,Y and K) for white. For black 95,90,90 and 80, making a tac of 355%
Do you use different values when the photo's are going to be printed with a digital press or offset press?

This is can often be image dependent. for an image with a full range of tones, then darker shadows and lighter highlights are ideal, without loosing key detail. If the source is RGB, then I prefer to set endpoints there and let the conversion handle the dmax and or dmin. If images need fine tuning then this is done post conversion.
