Ink tables

I dont mean to be ignorant, but what exactly do the ink tables do?

The reason i ask is because i can some profile strips direct to my epson 9880 and the colors appear washed out as compared to the same strips ran though an AX flow with color management turned off.

This is from Agfa QMSX PDF:

7- Click Update to save the calibration information in a new Ink Table.
This Ink Table will overwrite the current Ink Table. Only the calibration info
is updated. The Ink Table contains the following information:

- Calibration
- Ink restriction for the media
- Table to switch from four to six colors if the Sherpa is a six-color proofer.
The new Ink Table will be used for every job that is processed by ApogeeX and
that is sent to this proofer when this Media and Quality Map are selected.
