We work our make-readies and overs based on experience with the different finishing machines. Started a little excessive and brought it down to a real-life level within a couple of jobs. You may find it'll differ from one operator to the next as well (a good, measurable reason to pay some operators more than others!) if you're printing digital, it's no great problem if you end up short, but with offset it can be a real expensive pain in the butt to print a couple to complete the delivery!
